Pasta with Chicken and Broccoli
This is a very simple pasta dish, it is also lighter than most and perfect for a spring or summer day. When we are grilling I usually throw a few boneless chicken breasts on to cook and then freeze them to have on hand for any number of simple pasta dishes that go together quickly when I find myself pressed for time.
Pasta with Chicken and Broccoli
1 pound farfalle pasta, cooked al dente and rinsed
1 pound grilled or sauteed bonless chicken breasts, cut into cubes
2 cups steamed broccoli florettes
1/2 cup white wine
2 cloves garlic smashed
2 tablespoons shallots diced finely
1 teaspoon oregano crushed
1 cup strong chicken broth
28 ounce can chopped tomatoes or 3 cups diced fresh tomato
few crushed red pepper flakes (optional)
2 tablespoons olive oil
In a large heated saute pan heat the oil, add the garlic and shallots and saute
until they are fragrant, add the chicken and saute until heated thru, add the
wine and cook until almost evaporated, add the broccoli the tomatoes and
heat all together, add the pasta and the oregano and pepper flakes. Toss and
stir until everything is heated thru, top with some fresh grated parm and
enjoy. When tomatoes are ripe in season I make this with fresh ones, at
other times I use canned, either way this is a simple dish and so quick and
easy to get on the table in a hurry.
